FROZEN PUMPKIN DESSERT

Mix 1-1/2 cup graham cracker crumbs with 1/4 cup sugar and melted butter.  Press into the bottom of a 9 in. square pan.  Mix the following and then fold that into 1/2 gallon of softened vanilla ice cream.  Freeze and top with whipped cream when serving.
   
1 1/2 cup pumpkin 1/2 teasp. cinnamon
1/2 cup brown sugar 1/2 teasp. ginger
1/2 teasp. salt 1/8 teasp. cloves

 

 

 


Bisquick Mix

 

Mix dry ingredients well.  Cut in shortening making fine crumbs.  Use as you would bisquick.  Keep in tight covered containers.
2 lbs shortening 5 lb. flour
3/4 cup baking powder 1/2 cup sugar
2 tablsp. cream of tartar 3 tablsp. salt

For Pancakes:  mix:  1 egg, 3 cups mix, 1-1/2 cup milk

 

For one Pizza:  mix:  2-1/2 cups mix, 1/2 cup water

 

For Biscuits:  mix:  3 cups mix, 2/3 cup milk

 

For Short Cake:  mix:  3 cups mix, 1 egg, 1 cup milk

Fruity Cream
Cheese Spread


Cream all ingredients together and put in a pastry bag or plastic bag with corner cut.  Squeeze on crackers or serve from a bowl (chill mixture if serving from bowl).
  8 oz cream cheese, softened - can use low-fat or fat-free
  1 teasp. apple pie spice or 1/4 teasp. each of cinnamon,
            nutmeg, allspice & mace
  sugar to taste - can use sweetener

MORAVIAN SUGAR CAKE

   
1 cup hot mashed potatoes 3/4 teasp salt
1 cup white sugar 1 pkg of dry yeast
1 cup warm water or scalded milk 1/2 cup butter melted
2 eggs beaten 1/4 cup lard melted
4 cups flour

1/2 cup butter, cold cinnamon to taste - optional
1 lb light brown sugar  
   
Combine sugar with potatoes.  Mash to dissolve.   Dissolve yeast in water and add to the potatoe mixture.  Stir in the salt, lard, and eggs.  Add flour and mix until smooth.  Let rise for 5 hours or overnight.

Spoon batter into two greased 13x9" cake tins atleast 1/2" deep.  Let rise for 1 hour.  Poke indentations 1" apart into the surface but not too deep.  Put chips of cold butter in the holes.  Push down with some brown sugar.  Sprinkle rest of the brown sugar on the surface and sprinkle lightly with cinnamon.  Bake at 350 deg. for 25 minutes.  Let cool 5 minutes before removing from pan.
