Amish Preaching Soup also known as Bohnensuppe |

2 cup diced celery | 1/2 cup chopped onions |
1/4 teasp. pepper | 2 teasp. chopped parsley |
1 pound dried soup beans | 1 1/2 pounds ham |
Soak beans in water overnight. Cover the ham with water and boil until tender. Skim fat broth, add beans, and then the celery, onions, and pepper. Simmer all till ham is well cooked and the beans soft. Serves 6. | |

Mix dry
ingredients

2 cups flour |
1 1/4 cup sugar | |
1 tablsp baking power | |
1/2 teasp soda | |
1/2 teasp salt | |
1 teasp cinnamon | |
1/4 teasp nutmeg | |
Mix eggs, cream,
and shortening. Then stir into dry ingredients. Mix till blended. |

1 cup sour cream | |
1/4 cup melted shortening | |
Stir in apples and put in cake pan. | 1 cup grated apples |
TOPPING: Mix
ingredients. Sprinkle topping over cake.

1 tablsp melted shortening | |
1/2 cup pecans | |
Bake 350 deg. for 45-50 minutes. For muffins - use recipe without topping. |
Pumpkin Pie |
|
1-1/2 cup cooked mashed pumpkin | 1/2 teasp ginger & 1/4 teasp cloves OR 1 tablsp pumpkin pie spice |
1-1/2 cup rich milk (or light cream) | 3/4 teasp. salt |
3/4 cup brown sugar | 2 eggs |
2 tablsp. melted butter | 1 teasp cinnamon |
Mix all in a blender or mix well with mixer. Chill for at least one hour and pour into unbaked pie shell. Bake 450 deg for 10 minutes. Reduce heat to 325 deg for 35 minutes. When knife inserted in center comes out clean remove from oven and let cool. |
Wedding Spread |

2 cups sugar | 2 1/2 cups corn syrup |
1 cup water | 1/2 cup warm corn syrup |
3 or 4 egg whites | 1 teasp vanilla |
Can use to decorate cakes too. |
