Fruit Crunch

Delicious Pie

Baked Oatmeal

Chicken Corn Soup

Fruit Crunch also known as Frucht Snack
Mix and press half of this mixture into a 9 inch baking pan.
1 cup flour 3/4 cup rolled oats
1 cup brown sugar 1/2 cup melted butter
1 teasp. cinnamon
Add:  4 cups of cut-up fruit - peaches, rhubarb and apples are good but you can use anything
Combine and cook the following till thick and clear and then pour over fruit in pan:
1 cup sugar 1 cup water
1 teasp vanilla 1 tablsp cornstarch
TOP with remaining mixture of crumbs. Bake at 350 deg for approx 1 hour or until golden. Cut into squares and serve warm — plain or with whipped cream.

Delicious Pie
You will need two 9" unbaked pie shells.
Melt: 3/4 stick butter
Mix these ingredients with the melted butter and pour into the two pie crusts. 1 1/2 cup sugar
3 eggs
1 cup flake coconut
3 tablsp. flour
1 cup crushed pineapple
Bake 350 deg. for one hour or until set.

Baked Oatmeal  
   
1/2 cup melted butter 4 eggs
1 cup brown sugar 9 cups quick oats
2 teaspoons salt 4 teaspoons baking powder
3 cups milk  
   
  1. Cream Butter, eggs, and sugar.
  2. Add remaining ingredients and pour into a 9 x 13 pan.
  3. Bake at 350 degree for 20-30 minutes.
  4. Serve with milk and fruit.

Chicken Corn Soup
2 fresh chickens or
2 qts. canned chicken
salt and pepper to taste
1 qt. corn 3 hard boiled eggs - optional
  • If fresh chicken is used - cover chicken with water in kettle - add salt - cook till tender. Cut off meat and dice into small pieces.   Return to broth.  If using canned chicken - put in kettle and bring to a boil.
  • Add corn and bring to boil
  • Stir in rivels or hard boiled eggs.
  • Pepper to taste.
  • Stir in rivels or hard boiled eggs.
  • Serve hot with fresh bread.
RIVELS - 1 cup flour - 2 eggs.   Put flour in bowl.  Break eggs and mix with fork until dry and crumbly.   Drop rivels into boiling soup.  Stir to prevent them from packing together.
