Dessert Bars
1/2 cup butter, melted 3 eggs
1 box yellow cake mix without pudding 1/2 cup coconut
1/2 cup chopped walnuts 1 box powdered sugar
8 oz pkg. cream cheese
  • Combine butter, cake mix and one egg. 
  • Stir until moistened.
  • pat into bottom of well-greased jelly roll pan or cookie sheet.
  • Beat remaining 2 eggs and beat in cream cheese and powdered sugar
  • Stir in coconut and nuts
  • Pour over mixture in pan.
  • Bake at 325 deg. for 40-45 minutes or until golden brown.
  • Cut in squares when cool.

Lemon Cake Cookies
1 box lemon cake mix (supreme variety) 2 cup non-dairy whipped topping
1 egg powdered sugar
  • Combine cake mix, topping and egg
  • Stir until the dough begins to form a large ball
  • Cover and chill for one hour
  • Roll small balls (teasp size) in powdered sugar
  • Grease the cookie sheet before the first batch only
  • Place balls on pan and bake for 10 minutes at 350 deg.
  • Makes 3 dozen cookies

Popover Pizza
1 lb. ground beef 1 tablsp. oil
1 chopped onion 1 cup flour
2-3 cups pizza sauce 1 cup milk
2 eggs 1/2 teasp. salt
mozzarella cheese 1/2 cup parmesan cheese
  1. Brown beef and onion.
  2. Stir in sauce.  Simmer 10 minutes.
  3. Pour into cake pan.
  4. Top with cheese.
  5. Beat eggs, oil and milk till foamy.
  6. Beat in salt and flour and stir until smooth.
  7. Pour over meat sauce.
  8. Sprinkle with parmesan cheese.
  9. Bake 400 deg. till puffed and golden brown.
  10. Cool 10 minutes.
  11. Cut and serve by turning over with crust on bottom.

Chicken Potpie
  1. Melt 1 teasp. butter in 4-qt. Dutch oven.
  2. Add 8 skinless chicken thighs.  Brown on all sides - 3 to 5 minutes.   Push to one side.
  3. Add 1 medium chopped onion.  Cook until browned - 3 to 5 minutes.
  4. Add:
    4 cups water
    8 small red potatoes scrubbed
    1/2 teasp. salt
    1/4 teasp. saffron threads, crushed
    1/8 teasp. pepper
  5. Bring to boil over high heat.  Turn down to low.  Cover and simmer 25 minutes.
  6. Add 1 8-oz pkg. of potpie noodles or bowtie pasta
  7. Cook till tender approx. 12 to 15 minutes.
  8. Sprinkle with 1 tablsp. chopped parsley and serve.  Makes 4 servings.
